Are you in search of a healthy side dish that is easy to make? I’ve got the dish for you. Today I’m sharing a healthy sweet potato side dish recipe that has been a weekly favorite in my home for the past 10 years. I’ve mentioned this dish before, but I thought this was a great time to share the full recipe as we are all trying to start the year off by eating right!

This dish is also kid-approved. My kids never get sick of it for some reason! They love it and I enjoy making it because it’s so good for them. This is the perfect healthy side dish for kids.

I started introducing sweet potatoes into my family’s diet when my kids were little because sweet potatoes are usually a food that little ones like because they are so sweet!

If you are new to the blog, I’ve talked about the importance of this superfood before and how it is not only good for our health and waistline , but our skin too! It truly is on repeat in this house every week.

If you just bake them alone though, they can be kind of bland I think.

Roasting them with olive oil makes them extra sweet and caramelized. The longer you cook them the more caramelized and crispy they get! That’s what my kids love of course!!

I highly recommend trying to add them into your weekly menu as a side dish.

Now as for the seasoning, you can really use whatever you want. I often sprinkle cinnamon on top of the potatoes but have also done garlic, paprika and a herb medley before. All are great, it’s just a matter of preference. You need to experiment to find what you and your family like.

You can also keep it simple and just toss in olive oil and salt and pepper. The sweet potatoes themselves have enough flavor on their own when roasted.

The only thing that is a hassle is cutting the potatoes. That’s really the only trouble with this recipe. Other than that this is really simple!!

I love that I always have the ingredients on hand. I just naturally buy the sweet potatoes everytime I’m at the grocery store. I always have the seasoning and olive oil on hand.

No planning required!

This is also the perfect recipe for meal prep because you can make a large batch ahead of time. All you need to do is reheat during the week. They taste best right out of the oven, but they are also great reheated and are good as leftovers for lunch!

Healthy Sweet Potato Side Dish

Preheat the oven to 425 Degrees / Cook Time: Approx. 40 mins

  1. Peel and Chop up as many sweet potatoes as you want. I usually do two large ones for my family of 5. Cut the potatoes into cubes(I don’t make them perfect as you can see) and put them in a 9×11 baking dish.

2. Drizzle olive oil generously over the sweet potatoes and toss until they are well coated. Then sprinkle salt and pepper or your seasoning of choice, like garlic powder, onion powder, paprika, cinnamon, etc.

3. Cover with foil(Not shown) and put it in the oven. Cook for approximately 40 mins.

4. Stir every now and then to make sure all the potatoes are evenly cooked and coated in the oil.

5. Remove the foil after a half-hour of cooking.

6. After 40 minutes are up they’re all done!

I completely wing it and sometimes I take the potatoes out when they are not crispy because I don’t have time to let them cook any longer!

We just prefer them crispier and my kids love them that way. So 40 minutes may be too soon to take them out. You’ll know when you look at them if you want to cook them longer.

You can also mix white potatoes in as well if you want. I have also mixed in mushrooms and broccoli too! Lots of ways to change this dish to your liking.

  1. I just got a massive bag of sweet potatoes from Costco and was wondering what to do with all of them. This is brilliant! I’ve been steaming mine but I think my kids would like this better, especially the twins!
